Do I need both thrash and garbage folder? Both are versioned or could I delete one manually?

You shouldn’t need to delete anything manually in normal use.
The only time I’ve seen Storj say to manually delete data is after GE or disqualification, on a satellite.

That sounds awesome. But my system broke during an update progress. I needed to make space for it, so I deleted some data from garbage. Now it’s running again since weeks
the temp folder can contain files older than 3 days, and should be empty IF the node is stopped.
