There is no recommended route for running a single node on Windows with multiple drives/disks. The StorJ recommendation is to use one node per disk.
Some users do what you’re asking using hardware RAID controllers, Windows software RAID and Windows volume spans, but StorJ don’t recommend these setups.

Is it possible to run multiple nodes on the same Host machine? My Internet is fast enough with 100 Mbit/s up.
